Notice that you cannot upgrade this version of windows, you must do a clean installation of it, so yes, you would lose all your stuff if you don’t backup it. And as already been told, upgrade from windows 10 Enterprise Evaluation to Windows 10 Enterprise is not supported.

What made you think that it was possible? Most every other software package lets you download and evaluation copy and simply buy the keys to activate it to a full version. At a minimum the fact should be very clearly noted at install of the evaluation copy telling you that is should not be used for productive work and that a complete reinstall is required to activate.
